I was diagnosed with Coeliac’s Disease in 1993 so I have almost 30 years’ experience of catering for a special diet! I asked the specialist what I could eat and she said, ‘I think you can eat rice and potatoes!’ Thank goodness she also referred me to a dietician, otherwise I might have got very depressed. Instead, I’ve been baking with gluten-free ingredients ever since, perfecting a range of homemade celebration cakes and treats which taste just as good as the version with gluten in them.
Over the years I’ve made delicious wedding and celebration cakes made with sponge cake or fruit cake tiers, chocolate eclairs, stick toffee pudding and much, much more.
